- 1/4 cup shallot, chopped
- 3 tablespoons olive oil
- 3 tablespoons lime juice
- 1 tablespoon dijon mustard

- 1 place all ingredients in blender; cover.
- 2 blend until smooth.
- 3 use as your favorite dressing on fajitas, taco salad, or any lettuce or pasta salad.
