Chickpea & Olive Salad

Ingredients

  • Servings: 2
  • 1 (19 ounce) can chickpeas, drained
  • 1/2 cup black olives, pitted & chopped
  • 1/4 cup scallion, chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 garlic clove, crushed
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne powder
  • salt, to taste

Recipe

  • 1 mix all the ingredients together in a glass bowl until well blended.
  • 2 serve at room temperature.
