Low-fat Salmon Pasta Salad

Ingredients

  • Servings: 6
  • 2 cups cooked rotini pasta, rinsed drained,and cooled
  • 1/4 cup chopped onion
  • 3/4 cup grated carrot
  • 3/4 cup finely chopped celery
  • 7 1/2 ounces sockeye salmon, drained and flaked
  • 1/4 cup dill pickle relish
  • 1/2 cup fat-free mayonnaise
  • 1/4 cup plain fat-free yogurt
  • 1/4 teaspoon black pepper

Recipe

  • 1 cook pasta according to package direction.
  • 2 it takes 1 1/2 cups of uncooked rotini pasta to make 2 cups of cooked pasta.
  • 3 in a large bowl, combine cooked pasta, onion, carrots and celery.
  • 4 in a medium mixing bowl, place salmon.
  • 5 pick through to remove bones and skin.
  • 6 once salmon is picked through, mix in pickle relish, mayonnaise plain yogurt, and black pepper.
  • 7 add salmon mixture to pasta; mix gently to blend flavors.
  • 8 cover and refrigerate for at least 30 minutes.
  • 9 gently stir again just before serving.
