Low-fat Salmon Pasta Salad

Ingredients

- 2 cups cooked rotini pasta, rinsed drained,and cooled
- 1/4 cup chopped onion
- 3/4 cup grated carrot
- 3/4 cup finely chopped celery
- 7 1/2 ounces sockeye salmon, drained and flaked
- 1/4 cup dill pickle relish
- 1/2 cup fat-free mayonnaise
- 1/4 cup plain fat-free yogurt
- 1/4 teaspoon black pepper
Recipe
- 1 cook pasta according to package direction.
- 2 it takes 1 1/2 cups of uncooked rotini pasta to make 2 cups of cooked pasta.
- 3 in a large bowl, combine cooked pasta, onion, carrots and celery.
- 4 in a medium mixing bowl, place salmon.
- 5 pick through to remove bones and skin.
- 6 once salmon is picked through, mix in pickle relish, mayonnaise plain yogurt, and black pepper.
- 7 add salmon mixture to pasta; mix gently to blend flavors.
- 8 cover and refrigerate for at least 30 minutes.
- 9 gently stir again just before serving.
