Leah's Pesto Salad Dressing

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 20 fresh basil leaves (i walk out my front door and carefully pick each leaf off the live plant, that way you can have more)
  • 2 garlic cloves
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon parmesan cheese
  • 2 teaspoons honey
  • 2 tablespoons nuts
  • 1 1/2 tablespoons balsamic vinegar
  • 1/3 cup extra virgin olive oil (plain olive oil will do)

Recipe

  • 1 place all ingredients in food processor, making sure to at least peel the paper off of the garlic cloves.
  • 2 pulse to desired consistency, tasting as you go, adding ingredients to taste.
  • 3 all amounts except basil leaves are guesstimates, as i make this almost every morning to go on my lunchtime salad.
  • 4 i have used peanuts, pecans, hickory nuts, and the classic pine nuts. it's all good. whatever you have on hand will work just fine. i like it to have a distinguishable zing, those with less tolerable palates may want to just use one garlic clove.
