Mashed Potato Salad

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 5 red potatoes
  • 5 yukon gold potatoes
  • 2 tablespoons butter
  • salt and pepper
  • 1/2 cup mayonnaise
  • 1/4 cup prepared mustard
  • 1/2 cup sour cream
  • 1 stalk celery, finely chopped
  • 1 small red onion, finely diced
  • 2 small sweet gherkins, finely chopped

Recipe

  • 1 peel potatoes and cut into chunks.
  • 2 place potatoes in a large saucepan and cover with water.
  • 3 cook over medium heat until potatoes are tender.
  • 4 drain and place cooked potatoes in a large bowl.
  • 5 mash potatoes with butter and salt and pepper to taste.
