Frittata With Cherry Tomatoes And Baby Spinach

Total Time: 32 mins Preparation Time: 20 mins Cook Time: 12 mins

Ingredients

  • Servings: 2
  • 6 eggs
  • 1 teaspoon olive oil
  • 200 g cherry tomatoes, halved
  • 350 g baby spinach
  • chopped fresh basil
  • chopped fresh parsley

Recipe

  • 1 preheat the over to 200c/gas 6.
  • 2 whisk the eggs with 2 tablespoons of water.
  • 3 heat the oil with 1 tablespoon of water.
  • 4 add the tomatoes and spinach and cook until the spinach begins to wilt.
  • 5 sprinkle the herbs.
  • 6 pour in the eggs and transfer to the preheated over.
  • 7 bake for 10-12 minutes until well- risen and golden brown.
  • 8 slice in wedges and serve with a side salad.
