My Tasty Potato Salad

Ingredients

  • Servings: 8
  • 4 large potatoes
  • 1/2 cup olive oil mayonnaise
  • 2 tablespoons yellow mustard
  • 1/2 cup pickle juice
  • 1/2 cup onion, chopped
  • 4 hard-boiled eggs, chopped
  • 1 1/2 cups pickles, chopped
  • 2 teaspoons salt
  • 2 teaspoons garlic salt
  • 1 teaspoon black pepper

Recipe

  • 1 peel and dice potatoes to 1 inch cubes.
  • 2 cook potatoes till done.
  • 3 drain and let cool. (putting in fridge or freezer and stirring occasionally will speed process).
  • 4 stir ingredients together and season to taste.
