Garden Salad With Honeyed Popcorn

Ingredients

- 2 butter lettuce
- 2 avocados, sliced
- 2 mangoes, sliced
- 1 bunch fresh asparagus
- 2 lebanese cucumbers
- 250 g caramel corn
- 1/2 cup dried cranberries
- 1/2 cup olive oil
- 1/2 cup apple cider vinegar
- 2 tablespoons soya sauce
- 1 tablespoon curry powder
- 4 tablespoons brown sugar
- 1/4 red onion, chopped
Recipe
- 1 for the dressing process all ingredients in food processor.
- 2 steam asparagus 1 - 2 minutes. drain and refresh in cold water.
- 3 place lettuce leaves on serving platter.
- 4 lay cut avocado, mango, asparagus and cucumbers on top.
- 5 just before serving put on the cranberries, pour over the dressing and then add the caramel popcorn.
