No Fuss Cauliflower Salad

Total Time: 12 mins Preparation Time: 10 mins Cook Time: 2 mins

Ingredients

  • Servings: 4
  • 1 small cauliflower
  • 150 g plain yogurt
  • 150 g mayonnaise
  • 2 -3 spring onions (chopped) or 2 -3 green onions (chopped)

Recipe

  • 1 blanch flowerettes of cauliflower by bringing to a boil in a little water.
  • 2 cook 2 minutes then drain and plunge into ice cold water to stop further cooking.
  • 3 drain on clean tea towel or paper towels.
  • 4 mix together equal quantities of plain yogurt and mayonnaise.
  • 5 place cauliflower in a nice bowl and pour over the dressing.
  • 6 sprinkle with the chopped spring onions.
  • 7 serve cold.
