Dried Fruit Salad 2

Ingredients
- Servings: 8
- 125 g prunes (stoned)
- 125 g dried apricots
- 125 g dried apple rings
- 75 g raisins
- 3 bananas, peeled and sliced
- 4 cardamom pods, split
- 2 tablespoons honey
- 1 orange, zest of
- 1 lemon zest
- 2 oranges
- 125 ml water
Recipe
- 1 combine prunes, apricots and apple rings in a bowl and cover with boiling water.
- 2 cover and soak overnight.
- 3 after soaking preheat oven to 350°f.
- 4 drain fruit.
- 5 place fruit onto a baking dish and add raisins, banana and cardamom pods.
- 6 juice 2 oranges, reserve.
- 7 in a seperate dish combine remaining ingredients with the water and pour over fruit.
- 8 mix well and bake for 35 minutes then stir in the juice of the 2 oranges and serve warm.
