Hill Country Potato Salad

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 6 red potatoes, unpeeled
  • 1 teaspoon salt
  • 1/2 cup bacon, diced
  • 1/2 cup onion, diced
  • 1 1/2 teaspoons cornstarch or 1 1/2 teaspoons flour
  • 4 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup cider vinegar
  • 1/2 cup water
  • 1/4 cup onion, minced
  • 2 tablespoons fresh parsley, snipped
  • 1 teaspoon celery seed
  • 1/2 cup radish, sliced (optional)
  • celery leaves

Recipe

  • 1 cook potatoes, in boiling water and 1 teaspoon salt, until tender, about 35 minutes.
  • 2 drain potatoes, then peel and dice or partially mash.
  • 3 fry bacon in a skillet until crisp; add onions and saute until softened, but not browned.
  • 4 in a bowl, combine cornstarch or flour, sugar, 1 teaspoon salt and pepper; stir in the vinegar and water until smooth.
  • 5 add mixture to bacon and simmer and stir until thickened.
  • 6 pour the hot dressing over the potatoes and add 1/4 cup minced onion, parsley, celery seeds, and radishes; lightly toss.
  • 7 garnish with celery leaves.
