Hill Country Potato Salad

Ingredients

- 6 red potatoes, unpeeled
- 1 teaspoon salt
- 1/2 cup bacon, diced
- 1/2 cup onion, diced
- 1 1/2 teaspoons cornstarch or 1 1/2 teaspoons flour
- 4 teaspoons sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup cider vinegar
- 1/2 cup water
- 1/4 cup onion, minced
- 2 tablespoons fresh parsley, snipped
- 1 teaspoon celery seed
- 1/2 cup radish, sliced (optional)
- celery leaves
Recipe
- 1 cook potatoes, in boiling water and 1 teaspoon salt, until tender, about 35 minutes.
- 2 drain potatoes, then peel and dice or partially mash.
- 3 fry bacon in a skillet until crisp; add onions and saute until softened, but not browned.
- 4 in a bowl, combine cornstarch or flour, sugar, 1 teaspoon salt and pepper; stir in the vinegar and water until smooth.
- 5 add mixture to bacon and simmer and stir until thickened.
- 6 pour the hot dressing over the potatoes and add 1/4 cup minced onion, parsley, celery seeds, and radishes; lightly toss.
- 7 garnish with celery leaves.
