Not Tuna Salad

Ingredients

  • 1 1/2 cups almonds
  • 1 cup sunflower seeds
  • 1/2 cup water
  • 1/2 cup celery, minced
  • 1/2 cup red onion, minced
  • 1/2 cup parsley, minced
  • 1/3 cup fresh lemon juice
  • 1 tablespoon kelp powder
  • 1 1/2 teaspoons fresh dill weed
  • 1/2 teaspoon salt

Recipe

  • 1 soak almonds for 24 hours, and then rinse and drain.
  • 2 soak sunflower seeds for 4 - 6 hours, and then rinse and drain.
  • 3 process almonds and sunflower seeds in a food processor until smooth.
  • 4 transfer the mixture to a large bowl and stir in remaining ingredients.
  • 5 store in an airtight container in the fridge - will keep up to 1 week.
