Mrs. Somebody's Potato Salad

Ingredients

- 2 lbs equal-size potatoes
- 3 tablespoons cider vinegar
- salt, to taste
- 3/4 cup chopped celery
- 1/2 cup chopped onion
- 3 hard-boiled eggs, chopped (large)
- 1 cup mayonnaise
Recipe
- 1 cover the potatoes with salted cold water by 2 inches in a 3-quart saucepan and simmer, uncovered, until just tender, 15 to 25 minutes, depending on the size of the potatoes.
- 2 drain in a colander and cool slightly.
- 3 while the potatoes are simmering, whisk together the vinegar and salt in a large bowl until salt is dissolved.
- 4 when the potatoes are just cool enough to handle, peel and cut them into 1-inch pieces, adding them to the vinegar mixture as they are cut, and toss gently with a rubber spatula to combine.
- 5 let cool to room temperature, then add the remaining ingredients and salt and pepper to taste and stir gently to combine.
- 6 serve at room temperature or chilled.
