Mrs. Somebody's Potato Salad

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 lbs equal-size potatoes
  • 3 tablespoons cider vinegar
  • salt, to taste
  • 3/4 cup chopped celery
  • 1/2 cup chopped onion
  • 3 hard-boiled eggs, chopped (large)
  • 1 cup mayonnaise

Recipe

  • 1 cover the potatoes with salted cold water by 2 inches in a 3-quart saucepan and simmer, uncovered, until just tender, 15 to 25 minutes, depending on the size of the potatoes.
  • 2 drain in a colander and cool slightly.
  • 3 while the potatoes are simmering, whisk together the vinegar and salt in a large bowl until salt is dissolved.
  • 4 when the potatoes are just cool enough to handle, peel and cut them into 1-inch pieces, adding them to the vinegar mixture as they are cut, and toss gently with a rubber spatula to combine.
  • 5 let cool to room temperature, then add the remaining ingredients and salt and pepper to taste and stir gently to combine.
  • 6 serve at room temperature or chilled.
