No More Vampires Chickpea Salad

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 28 ounces canned chick-peas, drained and rinsed (from 2 cans)
  • lots parsley, chopped
  • 1/2 cup fresh peas
  • 1 carrot, grated
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 lemon, juice of
  • 4 garlic cloves
  • salt and pepper

Recipe

  • 1 whiz up last 5 ingredients to emulsify for the dressing.
  • 2 toss with the first 4 ingredients.
  • 3 chill for an hour or more.
  • 4 make sure everyone eats some, or you will find them cowering in a corner somewhere.
  • 5 option: don't use as much garlic.
