Greek Salad

Ingredients

  • Servings: 6
  • 3 tomatoes
  • 1 cucumber
  • 1 red onion
  • 1 cup green pepper
  • 1 cup red pepper
  • 1/2 cup olive
  • 4 ounces feta cheese
  • 2/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt
  • pepper

Recipe

  • 1 dice up the vegetables- i usually use a small red onion as i don't like it to overpower the salad. you can adjust the vegetables to your tastes.
  • 2 place the vegetables in a bowl along with the olives and feta cheese.
  • 3 mix olive oil, red wine vinegar, lemon juice, garlic, oregano, salt and pepper and pour over the vegetables.
  • 4 usually i let everything sit and marinate in the fridge for approximately 1/2 an hour. this seems to marry the flavours! i like to serve it in a clear serving bowl as the colours are so fresh and appealing.
