Mango Salad From Publix

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 4 mangoes, ripe
  • 2 limes
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 cup pecans, chopped
  • 6 ounces baby spinach, fresh

Recipe

  • 1 peel mangos; cut into slices. keep fruit from one mango separate.
  • 2 squeeze juice of both limes into blender (about 1/3 cup).
  • 3 add fruit of one mango, salt. pepper and oil. process until smooth, set aside.
  • 4 heat pecans in small saute pan until warm, golden and fragrant.
  • 5 place spinach greens on serving plates, arrange remaining mango slices on top. sprinkle with pecans, drizzle with dressing and serve.
