Mango Salad From Publix

Ingredients
- 4 mangoes, ripe
- 2 limes
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 cup pecans, chopped
- 6 ounces baby spinach, fresh
Recipe
- 1 peel mangos; cut into slices. keep fruit from one mango separate.
- 2 squeeze juice of both limes into blender (about 1/3 cup).
- 3 add fruit of one mango, salt. pepper and oil. process until smooth, set aside.
- 4 heat pecans in small saute pan until warm, golden and fragrant.
- 5 place spinach greens on serving plates, arrange remaining mango slices on top. sprinkle with pecans, drizzle with dressing and serve.
