Mushroom Salad

Ingredients

- 1/2 lb fresh mushrooms
- 1/2 cup salad oil
- 1/4 cup wine vinegar
- 1 tablespoon soy sauce
- 2 tablespoons parsley flakes
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 tablespoon sugar
- 1/4 teaspoon pepper
- 2 cups tomatoes, large pieces
- 1 cup onion, chopped
- 1/3 cup green pepper, chopped
- 2 stalks celery, sliced
Recipe
- 1 rinse, pat dry and slice mushrooms.
- 2 combine oil, vinegar, parsley, salt, sugar, garlic powder, pepper & soy sauce; mix well.
- 3 pour over mushrooms, toss well.
- 4 add tomatoes, onion, green pepper & celery.
- 5 toss gently.
- 6 cover & refrigerate 1 hour.
- 7 serve over fresh spinach leaves, if desired.
