Ingredients

- 1/2 head escarole, rinsed and chopped
- 1/3 cup mandarin orange segments, drained (canned)
- 1/2 cup broccoli floret, halved
- 1/4 cup pecans
- 2 hard-boiled eggs, sliced
- 2 tablespoons honey mustard dressing (simple honey mustard salad dressing or use newman's own lighten up honey mustard dressing)
Recipe
- 1 toss together escarole, orange segments, broccoli; top with pecans and egg slices.
- 2 drizzle with dressing.
